Rennet is a complex set of enzymes produced in the stomach of ruminant mammals. Rennet separates milk into solid curds and liquid whey used in cheese production. In young animal, rennet help to coagulate milk, so it remains in the stomach longer. Rennin converts liquid milk to semisolid similar to cottage cheese. So that it stays in the stomach long enough for proteins to be digested properly; outside of the animal, rennet can be used to coagulate milk in commercial cheese processing. Rennet is the commercial form of rennin, and it is sold as clear amber to dark brown liquid preparation or a white to tan powder or paste. It is used to coagulate milk, create curds, and thicken cheese during manufacturing. Rennet is a set of enzymes produced from several sources, including animal, plant, microbial, and fermentation-derived, predominantly used as a coagulant in industrial cheese-making. Rennet has no nutritional value. It is free from calories, fat, protein, carbohydrate, minerals and vitamins. Increasing demand for rennet in cheese preparation drives the market growth in the forecast period.

Rennet is mostly used in the preparation of cheese worldwide. Total United States cheese production in 2020 was 13.25 billion pounds, up 2 percent from 2016. Some molds have enzymes that are similar to chymosin. These enzymes are extracted in the laboratory to make microbial rennet. Microbial rennet requires the use of bacteria and fungi. Before being a fermented product, enzymes came from bacteria and fungi. Increasing demand for microbial rennet due to its low cost drives the market growth. Some molds, such as Rhizomucor miehei, can produce proteolytic enzymes. These molds are produced in a fermenter and then concentrated and purified to avoid contamination with unpleasant byproducts of mold growth. Using microbial rennet makes the production of various types of cheese. It is also suitable for elaborating vegan cheese, provided no animal-based ingredients are used in its production. Microbial rennet is not derived from the animal, so it is popular among vegetarian consumers, which drives segment growth.

Osterreichische Laberzeugung Hundsbichle is the leading supplier of animal rennet to the cheese industry. The company's products include the BioRen brand, ranging from mainstream products to more specialized items used to produce typical, traditional cheeses. Also, in June 2020, DuPont Nutrition & Biosciences announced the global launch of a new product named Danisco Chymostar, new milk coagulating preparation for the dairy industry that offers optimal coagulation and ripening kinetics. COVID-19 Impact: Positive impact on the global rennet market

During the COVID-19 pandemic, consumption of cheese increased due to the consumers spending more time at home during the pandemic and increased consumption of various recipes with cheese. According to Tetrapak insights in the pandemic, more than one-third (36%) of participants reported that their cheese consumption increased, with just 6% saying it had gone down. The highest reported an increase in consumption of yellow cheese, with 39% globally. Cheese has a 42% share of edible dairy, making it the biggest dairy food in the world. According to Glanbia Nutritionals, one of the cheese manufacturers, cheese sales grew during the pandemic owing to consumers' eating from home and new product launches becoming major trends. In Australia, new cheese products exponentially grew, with 263 new kinds of cheese launched in 2020 compared to 132 in 2019.
